Caprese Salad

Caprese salad is another one of the many simple Italian dishes that directly celebrate each of the precious ingredients that the labor of the local farmers brings forth.

Our friends and neighbors at "Bubalus Bubalis" make a beautiful, true buffalo mozzarella here in California. Our Mistral oil is the perfect complement, while our Barouni or Sierra offer an exciting contrast. Try and find your favorite match.

1 fresh mozzarella
2 tomatoes
few basil leaves
salt
Apollo Olive Oil
Cut the mozzarella in round slices about ¾" thick.
Cut the tomatoes in the same fashion.
Place them on salad plates, alternating a slice of mozzarella with one of tomato.
Chop some of the basil leaves and leave some whole.
Top the salad with the leaves.
Add a pinch of salt.
Drizzle with Apollo Olive oil.
