retains its characteristic soft and buttery persona but with a

MISTRAL
is made from traditional Provencal varieties: Salonenque,
Aglandau, Boutellion, Picholine and others which we
transplanted to our rugged foothills. Soft, rounded
and buttery, MISTRAL is perfect for white wine dishes such as
fish, poultry, vegetables and soft cheeses.

in a more intense oil. SIERRA
is made from California varieties: Mission, Sevillano,
and Ascolano to which our foothill grown Picholine and
Aglandau contribute complexity and elegance. SIERRA
is a robust, balanced and peppery oil, ideal for red wine dishes
such as pasta,
soups, red meat and casseroles.

Certified Extra Virgin Gold Series - Barouni 2007

We are
pleased to introduce the first oil in our new Gold Series
line to complement our flagship organic oils, Sierra and Mistral.
The BAROUNI is our first mono-varietal and is made from the
Barouni olive, originally from Tunisia. We really like this oil
in all its richness. It has a great vegetal fruitiness and a
sound piquancy. It is an exotic and intense oil that goes well
with red wine dishes like lamb, couscous, and grilled steaks.

OUR AWARD
WINNING OIL
The 2006
Sierra maintains our tradition of making a classic "California"
olive oil. It is made primarily from Mission olives, with
Picholine and Ascolano added for softening and complexity.
The Mission is a standard variety for California, and has
been growing on our mountain estate for many years (our youngest
trees are 24 years old, and our oldest are somewhere over
100).
Our other
oil is named for the famed Provencal wind, the Mistral, which
is so much of the character and essence of the region. It
is made of varieties that we imported from France in 1997.
The 2006 Mistral seems to us superior to the previous years
iterations. It contains mostly Salonenque, Picholine and Aglandau
- typical Provencal varieties that are usually blended together.
Our French colleagues, upon receiving samples, commented that
our oils show true Provencal character, with more intensity
and slightly more bitterness.
In this year
as in previous years, our two distinct blends, the Mistral
and Sierra were analyzed at 0.2% -0.3% free fatty acid
(far less than the 1% limit for Extra Virgin status).
Both earned the Californian Olive Oil Councils
certification as Extra Virgin. Our olive oils are certified
organic by the California Certified Organic Farmers
Association and contain estate grown, hand picked, stone
pressed olive oil. Every year since the first commercial
production in 2001 they have been recognized at the
L.A. County Fair as outstanding oils with Gold, Silver
and Bronze medals (see "Awards").
