Gianni is our miller and overviews all aspects of production. He learned his craft the old fashioned way on a traditional stone mill. His skills were further refined by working with state-of-the-art machinery. Having trained intensively with Marco Mugelli both in Italy and here, he is one of the most progressive millers in America. He is dedicated to the art of extracting the highest quality of flavors and nutrients that the olives contain.
Diana infuses the company with years of management experience, and since 2011 has been working full-time with Gianni in all aspects of orchard work and oil production, including the milling. With a background in winemaking, she plays a leading role in tasting and blending decisions each year.
Steve is behind the scenes everywhere. After offering his help as a small business consultant in the early years, he joined Apollo as a partner when we made the jump to our state-of-the-art equipment. He IS our back office – taking care of the website, accounting, shipping, and customer relations.
Umberto is Gianni and Diana Stefanini’s son, now off to university. His milling experiences on our state-of-the-art equipment fueled his interest in how things work, and led to his decision to study engineering. He still helps out in the family business during the summer breaks.
