FOR THE VINAIGRETTE
1/4 cup extra virgin olive oil
1 tbsp apple cider vinegar
1 tsp fresh lemon juice
1/2 tbsp Dijon mustard
1 tbsp agave syrup
1 clove garlic
pinch sea salt
pinch black pepper
FOR THE SALAD
2 handfuls spinach
1/2 red onion, thinly sliced
1 red apple, cut in 1/2 inch cubes and drizzled with lemon juice
4 ounces Manchego cheese, cut in 1/8 inch cubes
3 pitted dates, finely chopped
10 walnuts, broken into pieces
a pinch sea salt and a pinch black pepper
1. Combine the vinaigrette ingredients above in a small bowl. Whisk until well combined and set aside, covered with saran wrap.
2. Layer the salad ingredients in a large shallow bowl. Start with 2 handfuls of spinach, add the red onion slices on top of the spinach, followed by the apple cubes. Next, add the cheese layer of Manchego cubes, then sprinkle the pitted dates and walnuts bits around on the top. Season everything with sea salt and freshly cracked black pepper.
3. Top off the salad with the apple cider vinaigrette, enjoy!
